Pork Belly with Apple Sauce

INGREDIENTS
1kg pork belly
Salt and pepper to taste
2 tbsp olive oil
1 apple, peeled and diced
1 tbsp brown sugar
1 tsp cinnamon
1 tbsp apple cider vinegar
METHOD
Preheat the oven to 180°C.
Rub pork belly with olive oil, salt, and pepper. Place on a roasting tray.
Roast for 2 hours, until crispy and tender.
For the sauce: In a saucepan, combine apple, brown sugar, cinnamon, and vinegar. Cook over medium heat until apples soften.
Serve pork belly with apple sauce.
