Grilled Chicken Thighs with Lemon & Herb Marinade

Marinated in a zesty lemon and herb mixture, these grilled chicken thighs are full of flavor and perfect for a quick weeknight dinner.

INGREDIENTS

  • 4 chicken chops (bone-in, skin-on)

  • Juice and zest of 1 lemon

  • 2 tbsp olive oil

  • 2 garlic cloves, minced

  • 1 tbsp fresh rosemary, chopped

  • 1 tbsp fresh thyme, chopped

  • Salt and pepper to taste

METHOD

  1. In a bowl, combine lemon juice, zest, olive oil, garlic, rosemary, thyme, salt, and pepper.

  2. Marinate chicken thighs for 30 minutes.

  3. Preheat the grill to medium-high and cook the chicken for 25 minutes, turning halfway through.

  4. Serve with a side of grilled vegetables or rice.
