Beef Wellington

A decadent classic, this Beef Wellington combines tender beef with a savory mushroom layer, all wrapped in golden, flaky puff pastry.

INGREDIENTS

  • 1kg beef tenderloin

  • 250g mushrooms, finely chopped

  • 1 tbsp olive oil

  • 2 tbsp Dijon mustard

  • 2 tbsp butter

  • 1 sheet puff pastry

  • 1 egg, beaten

  • Salt and pepper to taste

METHOD

  1. Preheat oven to 200°C.

  2. Season beef with salt and pepper. Sear in a hot pan with olive oil until browned. Let it cool, then brush with mustard.

  3. In the same pan, melt butter and sauté mushrooms until soft. Cool.

  4. Roll out puff pastry and spread mushroom mixture over the beef. Wrap the beef in the pastry and seal the edges. Brush with egg wash.

  5. Bake for 50 minutes until golden brown and cooked to your liking.
