Grilled Barramundi with Mango Salsa

INGREDIENTS

  • 4 barramundi fillets

  • 1 mango, diced

  • 1 red onion, finely chopped

  • 1 red chili, chopped

  • 2 tbsp fresh coriander, chopped

  • Juice of 1 lime

  • Olive oil for grilling

METHOD

  1. Preheat grill to medium-high. Drizzle barramundi fillets with olive oil, salt, and pepper.

  2. Grill fish for 4-5 minutes on each side, until cooked through.

  3. In a bowl, mix mango, onion, chili, coriander, and lime juice.

  4. Serve the fish topped with mango salsa.
