INGREDIENTS

  • 4 pieces of barramundi or rockling

  • 1 cup flour

  • 1 egg, beaten

  • 1 cup breadcrumbs

  • 4 potatoes, cut into fries

  • Salt and pepper to taste

  • Olive oil for frying

METHOD

  1. Preheat oven to 180°C.

  2. Toss potato fries in olive oil, season with salt and pepper, bake for 20 minutes.

  3. Coat fish fillets in flour, egg, and breadcrumbs.

  4. Fry fish in hot oil for 4 minutes on each side until golden.
