INGREDIENTS
4 pieces of barramundi or rockling
1 cup flour
1 egg, beaten
1 cup breadcrumbs
4 potatoes, cut into fries
Salt and pepper to taste
Olive oil for frying
METHOD
Preheat oven to 180°C.
Toss potato fries in olive oil, season with salt and pepper, bake for 20 minutes.
Coat fish fillets in flour, egg, and breadcrumbs.
Fry fish in hot oil for 4 minutes on each side until golden.
